Pasta and Bacon Lardons

This meal happens to be one of The Cyclist's top five favourite meals (after my Mum's cottage pie, my cawl, and my Briam I think!) so I thought I'd share it here to make sure it's never forgotten. It's really nice and simple and makes a really great filling lunch! I first made it with Meryn when it was a try-and-eat-what's-there kind of day. It's a good source of protein (lean meat) and the mushrooms and onions make up two of your five a day! So here's how to do it:

Prep time: 5 minutes
Cooking time: 15 minutes
Serves: 1 person/2 people portion sizes are given

Ingredients**
75g/150g pasta (any shape will do!)
100g/200g bacon lardons
125g/250g onion
75g/150g mushrooms
100g/200g tomato passata
Salt
Mixed herbs for seasoning
**These are for one person/for two people (respectively)

Method

  1. Fill a saucepan with boiling water, add a little salt and begin cooking the pasta.
  2. Peel and chop the onion. Put a a little oil in a frying pan and begin frying the onion.
  3. Chop the mushrooms. When the onion is slightly translucent, add the mushrooms to the frying pan. 
  4. Add the bacon lardons.
  5. Keep stirring the pasta, and the contents of the frying pan. After 7 or so minutes (when the bacon lardons are cooked all the way through), add the tomato sauce to the frying pan. 
  6. Allow to simmer for a few minutes. 
  7. Drain the pasta. 
  8. Mix the sauce and ingredients with the pasta in the saucepan. 
  9. Season, serve and enjoy! 
You can add garlic for extra flavour as well, just chop it and add it in with the mushrooms. 

And there you have it, an easy 15-minute lunch!
